We got the chance to ask Bare Bones Broth founder (and incredible chef) Ryan Harvey some of your questions, and we are so happy to finally share the answers! It was so awesome being able to learn more about a company we support, with a product we praise. In this mini interview, Ryan will take you through his journey of pioneering the bone broth movement and reinventing cooking stock– and let me tell you, it’s a journey you want to be on. 

Q: You like to say that while you can’t control the genes you’re given- you can turn off bad ones by fueling the good ones- as the founder of Bare Bones Broth, how did reinventing cooking stock do this for you? 

I think reinventing cooking stock has been part of my personal journey, but it’s really about reinventing your mindset and relationship with food. Food is the one thing we interact with several times a day, it’s an emotional experience for everyone. For some, it’s a place of comfort, others it’s more utilitarian. For me, it’s a balance. Food is literally what fuels our life.

I was 18 when my father passed away suddenly from a heart attack. It was really that event that caused me to think about my lifestyle, and I decided that food is the one area in my life where I have the most control. I can’t control genetics, but only I can control what goes in my mouth, and ultimately what fuels my body. I have an incredible relationship with food. I eat whole, real foods 90% of the time and I feel great. I try to keep that simple. Food is an easy thing to complicate, especially when you want to make a positive change but don’t know where to start.

Q: Bone broth has been taking the wellness world by storm, who can benefit from bone broth?

Everyone! Just as anyone can enjoy tea or coffee, we see broth as an evolution in hot nostalgic beverages. Broth is the perfect platform to deliver whole body nourishment. Whether you’re doing keto, paleo, intermittent fasting, or you’re looking for a high protein,  sugar-free, low-calorie snack. Unlike most protein snacks, bone broth has no sugar, and it’s low calorie so you’re less likely to over eat but feel nourished, satiated and energized. While there isn’t a tremendous amount of science around the health claims of bone broth, there is an abundance of anecdotal evidence of people who’ve added broth to their daily routine and are feeling better and living better.

Q: As one of the pioneers of the bone broth movement, how is Bare Bones different than other brands?

Taste and convenience. There’s no shortage of bone broth options these days, however, there’s an abundance of really bad bone broth products and very few that are actually good enough to want to use them daily. Making bone broth that is quality AND tastes good at scale is very expensive. There’s no way around it. We’ve looked at building our liquid bone broth products several different ways in an effort to bring the costs down to make it more affordable and accessible. As a chef, I’m always thinking of ways that we can deliver on the promise of bone broth while thinking outside of the box. How can we push the limits of food manufacturing to deliver the highest quality, best tasting products? We’ve changed our recipes a few times over the past five years and are very proud of where the product has landed from a flavor, quality, and nutrition standpoint.

Q: What is your favorite way to cook with bone broth? 

I love slow cooking large cuts of meat. Just like stock-making, I enjoy the long slow process of taking a larger, tougher, inexpensive cut of meat and turning it into gold. My personal favorite is red wine braised short ribs. You basically cook short ribs in beef broth and red wine with root veggies and herbs for several hours. Then you take the cooking liquid and reduce it into a sauce that coats the back of a spoon. The combo of fork-tender short ribs and red wine sauce is one of my favorite food experiences. It never gets old.

Q: Here at elevays.com we’re huge supporters of the Ketogenic diet, how can bone broth’s powers be utilized in conjunction with keto? 

Bone broth is great for keto dieters because it’s high in protein and contains zero sugar or carbs. It’s a great snack, sipping on its own like tea or coffee, and can also be used in most keto recipes. It’s also great for those who are fasting.
