What is more fun than taco night? I would argue nothing. Taco night is something that my kids always look forward to.

There’s so many different healthy ways to make tacos, whether you’re wrapping them up in almond flour tortillas (we love the Siete brand for making this easy to do) or using lettuce as a wrap. The one my kids enjoy the most though are taco boats! They can jazz up their avocado taco boats any which way they want. I love it because it gets them creative and excited about healthy food!

Avocado Taco Boats

Avocado Taco Boats


Ingredients

  • Shredded Lettuce
  • Diced tomatoes
  • Shredded cheese
  • Ground beef
  • Taco seasoning
  • Sea salt
  • Avocado

Instructions

  1. Take a spoon and remove the avocado middle (not too much so that you’re taking all of it, but just enough so you can fit the stuffing in… save for anything else later… guac… smoothies etc)⠀
  2. Mix your seasoned ground beef (with taco seasoning and sea salt) with your diced tomatoes and stuff your avocado ⠀
  3. Top with shredded lettuce and shredded cheese⠀
  4. If you want to be extra fancy, add a little lime to the plate to squeeze on top when you’re ready to eat!⠀
