Beets are bursting with sweet and earthy flavors, vitamin C and folate making them an excellent support for blood and liver detoxification.
If you’re ever in a pinch for time, this paleo friendly recipe takes about 10 minutes to throw together tops, making our Beet Apple Salad the perfect side dish to bring to a cookout or store in the fridge for a midday snack. It’s a great way to enjoy something a little different that will leave your whole crew feeling refreshed and extra good. Really, this recipe can’t be beet (sorry we just had to). Enjoy!

Beet Apple Salad
Ingredients
- 3 beet roots
- 1 organic Fuji apple
- 2 inches ginger root (*optional if you want to add some spiciness)
Instructions
- Peel the apple and set aside
- Wash the beets, cutting the top and bottom root bit off
- Grate all ingredients, toss together in a bowl and refrigerate for at least an hour. Enjoy!
