Beets are bursting with sweet and earthy flavors, vitamin C and folate making them an excellent support for blood and liver detoxification.

If you’re ever in a pinch for time, this paleo friendly recipe takes about 10 minutes to throw together tops, making our Beet Apple Salad the perfect side dish to bring to a cookout or store in the fridge for a midday snack. It’s a great way to enjoy something a little different that will leave your whole crew feeling refreshed and extra good. Really, this recipe can’t be beet (sorry we just had to). Enjoy!

Beet Apple Salad


Ingredients

Scale
  • 3 beet roots
  • 1 organic Fuji apple
  • 2 inches ginger root (*optional if you want to add some spiciness)

Instructions

  1. Peel the apple and set aside
  2. Wash the beets, cutting the top and bottom root bit off
  3. Grate all ingredients, toss together in a bowl and refrigerate for at least an hour. Enjoy!

Notes

Keeps in the fridge for a week!
