Cucumber Avocado Salad - Quick & Healthy Side Recipe

This Cucumber Avocado Salad can be tossed together in less than 10 minutes and is always a crowd favorite. Whether you’re going to your neighbors for the fourth or right outback to enjoy some sunshine, this recipe is guaranteed to keep you cool and refreshed.

Cucumber Avocado Salad - Quick & Healthy Side Recipe

Cucumber Avocado Salad


Ingredients

Scale
  • 1 cucumber
  • 1 pound Roma tomatoes
  • 1 red onion
  • sea salt
  • pepper
  • olive Oil
  • 1 lemon
  • dill or cilantro *optional

Instructions

  1. Cut the cucumber lengthwise and chop into half moon slices
  2. Cut the tomato lengthwise and then cut the halves lengthwise again, dice into larger pieces
  3. Cut avocado into cubes
  4. Cut red onion into thin slices
  5. Drizzle olive oil over salad (about 4 tbsp) and toss everything together.
  6. Squeeze one half lemon over salad (this keeps the avocado from turning brown so don’t skip this)
  7. Add sea salt and pepper to taste and enjoy!
